Anti-Inflammatory Yassa Chicken

For 2 people: 

⏰ Preparation Time: 25 minutes

⏰ Rest Time: 6 to 12 hours 

 

Ingredients: 

  • 2 organic chicken thighs (raised without antibiotics or hormones)
  • 2 tsp Dijon mustard
  • 1 yellow lemon
  • 1 clove of garlic
  • 3 bay leaves
  • Salt
  • Pepper
  • 3 onions
  • A few olives

 

Instructions: 

  1. Peel and slice the onions, then place them in a mixing bowl. Add the two chicken thighs, season with salt and pepper.
  2. In another bowl, prepare the Yassa marinade: mix the lemon juice, mustard, and crushed garlic. Season lightly with salt and pepper. Pour the marinade over the chicken thighs and sliced onions. Mix well.
  3. Cover and let marinate in the refrigerator for 6 to 12 hours.
  4. Grill the chicken thighs in a pan, then set aside. Sauté the onions in the same pan, adding oil and mixing well over low heat.
  5. Return the chicken, olives, and bay leaves to the pan. Let everything simmer over low heat until the chicken is cooked (about 10 minutes).

It's ready! ? Serve your Yassa chicken hot with organic basmati rice (washed and cooked beforehand).
