Anti-Inflammatory Yassa Chicken

For 2 people:
⏰ Preparation Time: 25 minutes
⏰ Rest Time: 6 to 12 hours
Ingredients:
- 2 organic chicken thighs (raised without antibiotics or hormones)
- 2 tsp Dijon mustard
- 1 yellow lemon
- 1 clove of garlic
- 3 bay leaves
- Salt
- Pepper
- 3 onions
- A few olives
Instructions:
- Peel and slice the onions, then place them in a mixing bowl. Add the two chicken thighs, season with salt and pepper.
- In another bowl, prepare the Yassa marinade: mix the lemon juice, mustard, and crushed garlic. Season lightly with salt and pepper. Pour the marinade over the chicken thighs and sliced onions. Mix well.
- Cover and let marinate in the refrigerator for 6 to 12 hours.
- Grill the chicken thighs in a pan, then set aside. Sauté the onions in the same pan, adding oil and mixing well over low heat.
- Return the chicken, olives, and bay leaves to the pan. Let everything simmer over low heat until the chicken is cooked (about 10 minutes).
