Revised Shrimp Pad Thai

For 2 people:

⏰ Preparation Time: 20 minutes

 

Ingredients: 

  • 200 grams of peeled shrimp
  • 1 package of konjac or rice noodles
  • 2 eggs
  • 2 tbsp gluten-free soy sauce
  • 1 tablespoon garlic powder
  • 2 cloves of garlic
  • 1/2 onion
  • Pepper
  • A bit of coriander

For the Sauce: 

  • 3 tbsp gluten-free soy sauce
  • 1 tbsp fish sauce
  • 1/2 lemon juice
  • 1 tsp honey
  • 3 tbsp water

Topping: 

  • 15g cashews

 

Instructions: 

  1. In a bowl, place the shrimp and add the soy sauce, garlic powder, and pepper. Let marinate in the fridge.
  2. For the sauce: In a glass bowl, mix the soy sauce, fish sauce, lemon juice, honey, and water.
  3. Cook the marinated shrimp in a pan with a drizzle of oil.
  4. Slice the onion and garlic.
  5. Cook the noodles according to the package instructions (about 2-3 minutes).
  6. Sauté the onion and garlic in the pan with a drizzle of oil.
  7. Over low heat, add the noodles and eggs to the pan and mix well.
  8. Crush a few cashews and add them to the mixture. Pour in the shrimp and coriander before mixing everything together. It's ready! ?
