For 2 people:
⏰ Preparation Time: 20 minutes
Ingredients:
- 200 grams of peeled shrimp
- 1 package of konjac or rice noodles
- 2 eggs
- 2 tbsp gluten-free soy sauce
- 1 tablespoon garlic powder
- 2 cloves of garlic
- 1/2 onion
- Pepper
- A bit of coriander
For the Sauce:
- 3 tbsp gluten-free soy sauce
- 1 tbsp fish sauce
- 1/2 lemon juice
- 1 tsp honey
- 3 tbsp water
Topping:
- 15g cashews
Instructions:
- In a bowl, place the shrimp and add the soy sauce, garlic powder, and pepper. Let marinate in the fridge.
- For the sauce: In a glass bowl, mix the soy sauce, fish sauce, lemon juice, honey, and water.
- Cook the marinated shrimp in a pan with a drizzle of oil.
- Slice the onion and garlic.
- Cook the noodles according to the package instructions (about 2-3 minutes).
- Sauté the onion and garlic in the pan with a drizzle of oil.
- Over low heat, add the noodles and eggs to the pan and mix well.
- Crush a few cashews and add them to the mixture. Pour in the shrimp and coriander before mixing everything together. It's ready! ?
