Sticky Rice with Mango

For 2 people:

⏰ Preparation Time: 20 minutes

 

Ingredients:

  • 1 ripe organic mango
  • 200g Basmati rice
  • 100ml coconut milk
  • 1/2 carton of coconut milk
  • 2 tbsp honey
  • 200ml water
  • Sesame seeds (optional)

 

Instructions:

  1. 1. Rinse the rice multiple times until the water runs clear.
  2. 2. Cook the rice until it's soft and close to the texture of sticky rice (about 12 minutes), then add the 100ml of coconut milk and honey.
  3. 3. Peel and slice the mango into pieces.
  4. 4. For the sauce: In a bowl, mix the half carton of coconut milk with honey.
  5. 5. On a plate, shape the rice using a small bowl, place the mango slices on top, and pour the sauce over it. Sprinkle with sesame seeds. Enjoy your meal!
